Sugar Cake
Ingredients:
- vegetable shortening - 1/2 cup
- milk - 1 cup
- vanilla extract - 1 1/2 t
- flour - 2 cups plus 2 T
- sugar - 1 1/2 cups
- baking powder - 4 t
- salt - 1 t
- egg whites - 4
- powdered sugar for dusting -
Instructions:
In a bowl cream together shortening and milk for 3 minutes, add vanilla. In a second bowl combine flour, sugar, baking powder and salt. Add dry ingredients, one third at a time to milk mixture, blend well after each addition. Add egg whites, beating just until combined. Pour batter into a greased and floured 10 inch round baking pan. Bake in a preheated 350 degree oven for 40 - 45 minutes, until a toothpick inserted in the center comes out clean. Cool on a wire rack for 45 minutes, lightly dust with powdered sugar, slice and serve.
