Texas Tornado Cake
Ingredients:
- sugar - 1 1/2 cups
- eggs - 2
- unbleached flour - 2 cups
- fruit cocktail with syrup - 16 ounce can
- baking soda - 2 t
- chopped nuts - 1 cup
- brown sugar - 1/4 cup
- butter - 1/2 cup
- coconut - 1 cup
- brown sugar - 3/4 cup
- evaporated milk OR half and half - 1/2 cup
Instructions:
In a bowl mix together sugar, eggs, flour, fruit cocktail with syrup and baking soda. Pour into a greased 9 x 13 inch pan. Combine nuts and 1/4 cup brown sugar together, sprinkle over batter. Bake in a preheated 325 degree oven for 40 minutes.
Prepare coconut icing -- In a saucepan combine butter, coconut, 3/4 c brown sugar and milk, boil for 2 minutes. Spoon over HOT cake. Cool and cut into squares.
