Buttermilk Pecan Fudge
Ingredients:
- pecans - 1 cup
- sugar - 2 cups
- buttermilk - 1 cup
- butter, cut into pieces - 1/2 cup
- honey - 1 T
- kosher salt - 1/8 t
- flakey sea salt -
Instructions:
Line a 9 x 5 inch loaf pan with parchment paper, leave a generous overhang on sides; set aside.
Place pecans on a baking sheet, toast in a preheated 350 degree oven for 8 - 10 minutes toss occasionally, until fragrant and slightly darkened in color. Cool and coarsely chop.
In a saucepan combine sugar, buttermilk, butter, honey and kosher salt over medium high heat. Bring mixture to a simmer, cook, stirring occasionally, until candy thermometer registers 238 degrees about 6 - 8 minutes.
Immediately pour mixture into a bowl, with a electric mixer on medium high speed, beat until cool and thickened (mixture will be stiff and matte) for 5 - 8 minutes, fold in pecans. Evenly spread fudge into prepared pan; sprinkle sea salt over top. Let firm for 1 hour before cutting.
