Caramel Nut Logs
Ingredients:
- butter - 1/2 cup
- marshmallow creme - 7 ounce jar
- powdered sugar - 4 1/2 - 5 cups
- caramels - 11 ounce bag
- butter - 2 T
- half & half - 2 T
- chopped salted peanuts, cashews, pecans OR mixed nuts - 2 cups
Instructions:
Melt together 1/2 cup butter and marshmallow creme, stir until well mixed. Stir in 4 1/2 cups powdered sugar; mix well. Place on work surface lightly sprinkled with powdered sugar; knead in no more then 1/2 cup additional powdered sugar until mixture is firm.
Divide mixture into 6 equal parts. Shape each into 5 x 1 inch log; wrap in plastic food wrap. Place logs in the freezer for 2 hours or overnight until firm.
Line 2 baking sheets with waxed paper; set aside. Place nuts on 1 of the pans.
In a saucepan, combine caramels, 2 T butter and half & half, cook over medium heat, stir often, until caramels are melted and smooth. Reduce heat to low to keep caramel mixture warm.
Remove logs from freezer; unwrap. Dip 1 log into warm caramel mixture, turn to coat; allow excess caramel mixture to drip back into pan. Place caramel coated log on nut covered waxed paper. Roll log to coat with nuts. (If necessary use hands to press nuts into log.) Place log on waxed paper lined baking sheet to cool. Repeat with remaining logs. Place in refrigerator for 1 hour; wrap each log in plastic food wrap. Store in a airtight container in the refrigerator. To serve cut each log into 12 slices.
