Cashew Clusters
Ingredients:
- hard caramels - 1 cup
- cashews - 1/2 cup
- milk chocolate chips - 1 cup
- white chocolate - 2 T
- sea salt - for sprinkling
Instructions:
Lightly coat a baking sheet with cooking spray. Place (7 - 9) cashews in piles. Melt caramels in the microwave on high 2 - 4 minutes until completely melted and smooth. Spoon about 1 T caramel over the top of each cashew pile. Place baking sheet in the freezer.
Melt chocolate chips, stir until smooth. Spoon about 1 T of chocolate over caramel, cover caramel completely. Place in refrigerator for 10 minutes. Melt white chocolate, drizzle over clusters. Sprinkle with sea salt. Store at room temperature in a airtight container.
