Coconut Dreams Truffles
Ingredients:
- Keebler Coconut Dream cookies, finely crushed - 15 ounces
- cream cheese, softened - 8 ounces
- chocolate flavored almond bark - 20 ounce package
Instructions:
Set aside 2 T of crushed cookies for garnish. In a bowl, mix together the cookie crumbs and cream cheese until well combined.
Scoop tablespoon size pieces of dough and roll into balls. Place them on a wax paper lined baking sheet and place in the freezer for 30 minutes.
Melt the almond bark and dip each truffle into the coating. Lift out with a fork, tapping the fork on the rim of the pan for excess coating to drip off. Immediately garnish with reserved crumbs. Yield 35 - 40
