Cookie Dough Truffles
Ingredients:
- butter, soft - 1/3 cup
- packed brown sugar - 1/3 cup
- vanilla - 1 T
- flour - 1 cup
- mini semi sweet chocolate chips or mini M & M's - 1 cup
- dark chocolate OR milk chocolate candy coating wafers - 8 - 10 ounces
Instructions:
In a bowl, beat butter, brown sugar and vanilla at medium speed until combined. Beat in flour just until combined, DO NOT OVER MIX. Stir in chocolate chips and shape into 1 inch balls, place on wax paper lined pan. Cover and place in freezer for 30 minutes.
In a double boiler melt chocolate wafers over low heat; stirring until melted and smooth. Remove from heat.
With a fork, dip the balls into chocolate and allow excess to drip back into your pan. Place on wax paper lined baking sheet and chill until set. If desired drizzle remaining chocolate on top of the truffles.
Place truffles in a airtight container and store in the refrigerator up to 1 week.
