Date Balls
Ingredients:
- butter - 1/2 cup
- sugar - 1 cup
- sweetened pre cut chopped dates - 1 cup
- egg, beaten - 1
- chopped walnuts - 1 cup
- Rice Krispies cereal - 2 cups
- sweetened flaked coconut - 1/2 cup - for rolling
- fine chopped walnuts - 1/2 cup - for rolling
Instructions:
In a saucepan, melt together butter and sugar; add chopped dates. Stirring very quickly, add beaten egg. Bring mixture to a boil, stirring constantly, boil for 4 - 5 minutes. Remove from heat, add chopped walnuts and cereal, mix well. Spread mixture onto a pan, cool. Cut into 1 inch sized cubes. Combine chopped walnuts and coconut in a shallow dish. Grease hands with butter, roll each square into a ball, then roll each ball into walnut coconut mixture. Shake excess off. Yields 40
