English Toffee
Ingredients:
- unsalted butter - 1/2 cup
- margarine - 1/2 cup
- sugar - 1 cup
- Kosher salt - 1/4 t
- vanilla extract - 1/2 t
- milk chocolate chips, melted - 12 ounces
- unblanched whole almonds - 1 cup
- finely ground walnuts - 1 cup
Instructions:
Place almonds in a single layer, on a foil lined 11 x 7 inch baking dish; set aside.
In a heavy pan, combine butter, margarine, sugar and salt. Bring to a rolling boil on medium high heat STIRRING CONSTANTLY with a wooden spoon. Continue boiling and STIRRING for 5 - 7 minutes until candy thermometer reads 300 degrees, stir in vanilla. Carefully pour over almonds. Cool completely.
Spread chocolate over top of toffee, immediately sprinkle walnuts over chocolate.
