Lemon Pie Fudge
Ingredients:
- crushed, lemon shortbread cookies - 1 1/2 cups
- butter, melted - 3 T
- white chocolate chips, divided - 4 cups
- sweetened condensed milk - 1 can
- pure lemon extract - 1 t
- yellow food coloring - 2 - 3 drops
- marshmallow creme - 3/4 cup
Instructions:
Mix together, cookie crumbs and butter, press into an 8 x 8 inch or 9 x 9 inch pan lined with foil and coated with cooking spray. Bake in a preheated 350 degree oven for 15 minutes. Remove from oven, set aside, completely cool.
Prepare filling -- set aside 1 cup white chocolate chips. In a saucepan, melt 3 cups white chocolate chips and sweetened condensed milk, over medium low heat, stirring, until smooth. Melt reserved 1 cup of chips in microwave, on 50% power, for 1 - 2 minutes, stirring each 30 seconds, until melted. Remove chips and sweetened condensed milk from heat, stir in lemon extract and food coloring; pour over crust.
Work quickly, stir together marshmallow creme and melted white chocolate chips. If needed, microwave another 15 seconds to help the mixture stir together. Drop chunks of mixture on top of lemon fudge, use a knife and swirl it into the fudge. Cool for 10 - 15 minutes, place in refrigerator until set. Slice and serve.
