Maple Fudge
Ingredients:
- sugar - 4 cups
- butter - 1/2 cup
- genuine maple syrup - 3/4 cup
- milk - 1 cup
- marshmallows - 1 1/2 cups
- chopped walnuts OR pecans - 1 1/2 cups
- vanilla extract - 1 t
Instructions:
In a saucepan, combine sugar, butter, maple syrup, milk and marshmallows. Cook over medium heat, stir occasionally until a candy thermometer reaches 225 - 235 degrees or until it forms a soft ball. Remove from heat. Cool mixture to 115 degrees.
Add nuts and vanilla, mix on medium speed with an electric mixer until mixture loses its gloss and starts to harden around the edges of the saucepan. Pour mixture into 2 wax paper lined 9 x 5 inches loaf pans. (Have wax paper hang over the edges on the long side of the pan for easy removal.)
Place pans in the refrigerator for two hours. Remove fudge from pan and slice.
