Mashed Potato Fudge
Ingredients:
- dark chocolate, chopped fine - 3 ounces
- coconut oil - 4 T
- powdered sugar - 1 pound
- mashed potatoes (no lumps) - 1/2 cup
- whole milk - 1 T
- vanilla extract - 1 tsp
- Kosher salt - 1/8 tsp
- cayenne pepper, optional - 1/8 tsp
- caramel sauce - for garnish
Instructions:
Melt together chocolate and coconut oil. Let rest for a couple of minutes, stir in sugar, potatoes, milk, vanilla, salt and cayenne pepper. Mix until it becomes the consistency of dough.
Butter a 8 x 8 inch baking dish. Using your hands, spread mixture evenly into the pan.
Place in refrigerator, for 1 - 2 hours to set. Cut into squares; drizzle with caramel sauce
