Mint Truffles
Ingredients:
- thin mints, finely crushed - 9 ounce box
- cream cheese, room temperature - 4 ounces
- chocolate candy melts or chocolate almond bark - for dipping
Instructions:
In a bowl, mix together crushed cookies and cream cheese. Roll into 1 inch balls, place on wax paper lined baking sheet. Place in refrigerator for 30 minutes.
Melt candy melts and dip truffles in the chocolate. Place truffles on wax paper, if desired garnish with nonpareils before chocolate sets. Place in refrigerator until firm. Yield 24
