Monster Cookie Truffles
Ingredients:
- cream cheese, softened - 4 ounces
- butter, softened - 1/2 cup
- light brown sugar - 3/4 cup
- flour - 3/4 cup
- quick cooking oatmeal - 1/2 cup
- mini chocolate chips - 1/2 cup
- mini M & M's - 1 cup
- chocolate candy melts, melted - 12 ounces
- sprinkles, opitional - garnish
Instructions:
In a bowl, beat butter and cream cheese until creamy. Beat in sugar and flour until completely combined. Fold in oats, chips and M & M's.
Form into tablespoon size balls, place on a parchment paper lined cookie sheet. Place in the freezer for 2 hours. Melt chocolate in the top of a double boiler. Use a fork or toothpick, dip frozen truffles into melted chocolate. Tap on the side of the pan to remove excess, place on parchment paper. Immediately garnish with sprinkles if desired. Place in refrigerator for chocolate to harden.
