Pecan Pie Balls
Ingredients:
- graham crackers, crushed - 1 cup
- pecans, toasted, chopped - 2 1/2 cups
- brown sugar, packed - 1 cup
- salt - 1/2 t
- maple syrup - 2 T
- bourbon, brandy OR spiced rum - 1/4 cup
- vanilla - 1 t
- dark chocolate bark - 7 ounces
- sea salt (optional) -
Instructions:
In a bowl combine crumbs, pecans, sugar and salt. Add maple syrup, bourbon and vanilla; mix thoroughly. Use tablespoon size portions roll into balls. (If pecan balls are not smooth, roll again with slightly water damp hands) Place balls on cookie sheet lined with parchment paper, place in the freezer for 2 hours. Melt chocolate bark per directions on package. Dip frozen balls into chocolate, place on parchment paper lined cookie sheet. If desired garnish with sea salt before the chocolate sets. Yields approx. 24
