Pecan Pie Truffles
Ingredients:
- pecans, toasted and finely chopped - 2 1/2 cups
- graham cracker crumbs - 1 cup
- packed dark brown sugar - 1 cup
- salt - 1/2 t
- maple syrup - 2 T
- bourbon - 1/4 cup
- vanilla - 1 t
- dark chocolate wafers - 7 ounces
Instructions:
In a bowl, stir together pecans, cracker crumbs, brown sugar and salt until well combined. Add maple syrup, bourbon and vanilla, stir thoroughly until fully incorporated.
Form into walnut sized balls, place on a cookie sheet and place in the freezer for 2 hours.
Melt the chocolate in the top of a double boiler. Dip the frozen balls into the chocolate, place them on a baking sheet lined with wax paper. Let sit until firm.
