Pecan Pralines
Ingredients:
- unsalted butter - 5 T
- light brown sugar - 1 cup
- sugar - 1 cup
- melted vanilla bean ice cream - 1 cup
- chopped pecans - 2 1/2 cups
- salt - 1/2 t
Instructions:
In a saucepan over medium low heat, combine sugars and ice cream, stirring until sugars are dissolved. Using a pastry brush dipped in water, brush down sides of pan to prevent sugars from crystallizing. Add 5 T butter, stir to combine. Increase heat to medium, cook until mixture reaches 240 degrees F. Remove pan from heat, stir in pecans and salt, stir for 30 - 60 seconds. Place mounds about the size of 2 T, onto buttered parchment paper lined baking pans. Cool until set, about 30 minutes. Store in an airtight container for up to 1 week.
