Peppermint Fudge
Ingredients:
- cream cheese, softened - 4 ounces
- powdered sugar - 4 cups
- baking cocoa - 6 T
- milk - 2 t
- vanilla extract - 1 t
- chopped nuts - 1/2 cup
- cream cheese, softened - 2 ounces
- powdered sugar - 2 cups
- milk - 1 1/2 t
- peppermint extract - 1/2 t
- crushed peppermint candy - 1/4 cup
Instructions:
In a bowl, beat 4 ounces cream cheese. Gradually beat in 4 cups powdered sugar, cocoa, 2 t milk and vanilla. Stir in 1/2 nuts. Spread in a foil lined 8 x 8 inch pan that is coated with 2 1/2 t butter. Chill for 1 hour or until firm.
In a bowl beat 2 ounces cream cheese until smooth. Gradually beat in2 cups powdered sugar, 1 1/2 t milk and peppermint extract. Stir in candy. Spread evenly over chocolate layer.
Cover, place in refrigerator for 1 hour, until firm. Using foil, lift fudge from pan. Cut into small squares.
Store in a airtight container in the refrigerator.
