Peppermint Oreo Truffles
Ingredients:
- Oreo cookies, crushed - 1 package
- cream cheese - 8 ounces
- Andes peppermint crunch pieces, divided - 2 cups
- white melting chocolate - 10 ounces
- shortening - 1 1/2 tsp
- Holiday Sprinkles -
Instructions:
in a bowl, combine Oreo's and cream cheese; beat until a soft dough forms. Stir in 1 3/4 cups peppermint pieces. Roll dought into 40 balls. Place in the refrigerator for 30 - 45 minutes. In the top of a double boiler melt white chocolate and 1 tsp shortening, stir until creamy. Dip Oreo balls into chocolate. Place on wax paper until set. Melt together 1/4 cup peppermint pieces and 1/2 tsp shortening; stir until creamy. Place mixture in a ziplock bag, snip a small piece off the corner of the bag. Drizzle in a zig zag pattern over the truffles and top with sprinkles. Cover, store in refrigerator.
