S’mores Truffles
Ingredients:
- semisweet chocolate chips - 1 1/2 cups
- heavy cream - 1/2 cup
- graham crackers, crushed very fine - 2 - 3 whole
- mini marshmallows - 24
Instructions:
Place chocolate chips in a bowl; set aside.
In a small saucepan, heat cream until very hot. Pour hot cream over chocolate, stir to make sure chips are fully immersed. Let mixture sit for 5 minutes, whisk mixture starting from the center outward until very smooth. Place in refrigerator for 1 - 2 hours to set up.
When truffle mixture is firm enough, take one rounded tablespoon of truffle mixture, flatten. Place 2 mini marshmallows in the center, pinch chocolate around it. Roll into a ball until marshmallows are completely covered.
Roll truffles in graham cracker crumbs. Place in refrigerator until ready to serve.
Store truffles in an airtight container in the refrigerator for up to 5 days. Yield 12 truffles.
