Amaretto Cherries
Ingredients:
- lemon zest - 1
- lemon juice - 2 T
- water - 2 1/2 c
- sugar - 2 c
- pitted sweet cherries - 7 c
- Amaretto liqueur - 4 T
Instructions:
Prepare syrup - In a sauce pan over medium high heat combine lemon zest, juice, water and sugar. Bring to a boil, gently boil for one minute.
Pack the cherries into hot, sterilized jars, add one tablespoon of Amaretto to each jar of cherries. Ladle hot syrup into the jars, leaving 1/2 inch of head space. Wipe the rims of the jars, seal with hot sterilized lids and bands. Process the jars in boiling water for 15 minutes. Yield 4 pints.
