Cucumber Relish
Ingredients:
- cucumbers - 1 gallon
- onions - 12
- canning salt - 1/2 c
- white vinegar - 4 c
- sugar - 6 c
- mustard seed - 1 T
- turmeric - 1 T
- cloves - 12
Instructions:
Grind cucumbers, onions and peppers, stir in salt; let set overnight.
In large pan mix together vinegar, sugar, mustard seed, turmeric and cloves, bring to a boil and boil for 5 minutes. Add drained vegetables and simmer 20 minutes. Ladle into hot sterilized jars and seal.
Yields about 8 pints.
