Frozen Zucchini
Ingredients:
- zucchini - desired amount
- coarse kosher salt - 1 t per pound of zucchini
Instructions:
Wash zucchini, cut off ends, discard, shred zucchini. Place zucchini in a bowl, sprinkle salt over zucchini and mix in. Let set for 10 minutes. Place zucchini in a clean towel and wring out as much water as possible. Press zucchini into desired sizes of measuring cups, place in plastic bag, flatten bag with your hand, place in freezer.
