Baked Eggs, Broccoli and Ham Casserole
Ingredients:
- small broccoli flowerets, blanched about 2 minutes, drain well - 4 - 6 cups
- diced ham - 1 - 2 cups
- shredded Mozzarella cheese - 1 cup
- sliced thin, green onion - 1/3 cup
- eggs, well beaten - 8 - 10
- all purpose seasoning blend - 1 t
- fresh ground pepper - to desired taste
- sour cream - for serving
Instructions:
Grease a 9 x 12 inch casserole dish. Layer broccoli, ham, Mozzarella and onions in casserole dish. Season with all purpose seasoning and pepper, pour eggs over ingredients. Using a fork, gently stir the mixture just until all the ingredients are coated with egg.
Bake in a preheated 375 degree oven for 35 - 45 minutes, or until entire mixture is set and the top is starting to lightly brown. Serve hot, with sour cream.
