Cheeseburger Casserole
Ingredients:
- olive oil - 1 T
- ground beef - 1 1/2 pounds
- onion, diced - 1
- kosher salt, freshly ground pepper - to desired taste
- diced tomatoes, undrained - 28 ounce can
- tomato sauce - 8 ounce can
- chicken broth - 2 c
- ketchup - 1/4 c
- dijon mustard - 2 t
- rotini pasta - 1 pound
- shredded cheddar cheese - 2 c
- Roma tomato, diced - 1
- green onions, sliced - 2
Instructions:
In a large pot, heat olive oil over medium high heat. Add ground beef and onion, cook until browned (crumble beef as it cooks); season with salt and pepper. Drain excess fat. Stir in tomatoes, tomato sauce, chicken broth, ketchup, mustard, pasta and 2 c water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked, 13 - 16 minutes.
Remove from heat, sprinkle cheese over top, cover until cheese has melted, about 2 minutes. Garnish with tomato and green onions, serve immediately.
