Cheeseburger Pasta Casserole
Ingredients:
- lean ground beef - 1 pound
- taco seasoning - 1 packet
- Rotel tomatoes and green chilies OR petite diced tomatoes - 1 can
- beef broth OR water - 2 cups
- elbow macaroni - 1 cup
- butter - 2 T
- flour - 2 T
- milk - 3/4 cup
- shredded cheddar cheese - 1 cup
- salt - 1/2 tsp
- black pepper - 1/2 tsp
Instructions:
In a skillet, brown meat and drain. Stir in taco seasoning, tomatoes, broth and macaroni. Bring to a boil, reduce heat and cover pan. Simmer for 12 - 14 mins until macaroni is tender.
In a saucepan, melt the butter; whisk in flour and whisk for 5 minutes until light brown in color. Add milk, bring to a boil. Whisking until smooth and thickened. Remove from heat, stir cheese in until melted. Add salt and pepper. Pour sauce over hamburger mixture. Stir gently to combine. Serve.
