1 lb chicken breasts, cut into 1 inch cubes
6-8 medium red potatoes leave skin on and cut into 1/2 inch cubes
1/3 c olive oil
1 1/2 t salt
1 t black pepper
1 T paprika
2 T garlic powder
hot sauce to desired taste
In a large bowl, combine and mix together olive oil, salt, pepper, paprika, garlic powder and hot sauce. Add potatoes and chicken and stir to coat. Carefully place the mixture into a greased 13×9 inch baking dish.
Bake at 400 degrees for 55-60 minutes, stirring every 20 minutes, until cooked through, crispy, and browned on the outside. When fully cooked, remove from the oven and top with following.
2 c fiesta blend cheese
1 c crumbled bacon (cooked)
1 c diced green onion
Return casserole to oven and bake 5 minutes or until cheese is melted.
