Chicken Chalupa
Ingredients:
- flour tortillas - 2 medium packages
- whole chicken breasts, cooked and diced - 4 large
- cream of chicken soup - 2 cans
- sour cream - 1 pint
- Monterey Jack cheese, grated - 3/4 pound
- cheddar cheese, grated - 3/4 pound
- sliced, ripe olives - 1 cup
- green onions, chopped - 3/4 cup
- green chilies, undrained - 1 large can
- whole kernel corn, drained - 1 can
- paprika -
Instructions:
In a bowl combine soup, chilies, onion, sour cream, olives and ¾ of both cheeses. Set aside 1 ½ cups of this mixture. Add chicken to remainder of mixture. Place 2 - 3 T chicken mixture on each tortilla. Fold and place seam side down in greased casserole dish. Spoon set aside mixture on top of tortillas. Sprinkle top with remaining cheeses. Top with paprika. Cover with foil and bake in preheated 350 degree oven for about 20 - 30 minutes. Remove foil after 20 minutes.
