Chicken Rotini
Ingredients:
- chopped onion - 1/2 cup
- butter, melted - 3 T
- cream of chicken soup - 2 - 10 3/4 ounce cans
- shredded cheddar cheese - 2 cups
- milk - 1 cup
- chopped cooked chicken - 3 1/2 cups
- cooked rotini noodles - 2 1/2 cups
- salt and pepper - to desired taste
- Ritz cracker crumbs - 1/4 cup
Instructions:
In a skillet, melt butter on medium high heat, add onions saute until tender; add soup and 1 ½ cups cheese; gradually stir in milk. Lower heat to medium, cook until cheese melts; stir in chicken and macaroni; salt and pepper to desired taste.
Pour mixture into a greased 2 ½ quart casserole; sprinkle with cracker crumbs.
Bake in a preheated 350 degree oven for 30 minutes; until heated through. Top with ½ cup cheese and bake for 5 minutes.
