Chicken Parmesan Casserole
Ingredients:
- uncooked boneless, skinless chicken breasts, cubed - 2 pounds
- cloves garlic, minced - 2
- crushed red pepper flakes - 1/4 t
- fresh basil, finely chopped - 1/4 c
- marinara sauce - 2 c
- shredded mozzarella cheese - 1 1/2 c
- grated parmesan cheese - 2 ounces
- garlic croutons, roughly crushed, leaving some larger pieces - 3.5 ounces
Instructions:
Place chicken in a lightly greased 9 x 13 inch baking dish in a single layer. Sprinkle garlic, pepper flakes and basil evenly over the chicken. Evenly spread the sauce over the top. Sprinkle ¾ c Mozzarella and 1 ounce Parmesan evenly over sauce. Sprinkle crushed croutons over the cheese. Add the rest of the mozzarella and parmesan cheese.
Bake in a preheated 350 oven for 40 - 45 minutes. Let stand for 5 minutes before serving.
