Chicken Supreme Pasta Bake
Ingredients:
- pasta, cooked al dente - 1 pound
- cubed grilled chicken - 2 cups
- chopped onion - 1/2 cup
- diced green pepper - 1/2 cup
- diced mushrooms - 1/2 cup
- minced garlic - 1 t
- butter - 3 T
- flour - 3 T
- chicken broth - 2 cups
- plain Greek yogurt - 1 cup
- shredded cheddar cheese - 1 1/2 cups
- shredded mozzarella cheese - 1 1/2 cups
- diced tomatoes - 14.5 ounce can
- salt and pepper - to desired taste
- oregano -
Instructions:
In a skillet, saute onion, green pepper, mushrooms, garlic and butter, for 2 minutes. Stir in flour, cook for 2 - 3 minutes. Whisk in broth, stir until broth thickens slightly. Whisk in yogurt, add 1 c cheddar cheese and 1 c mozzarella cheese, stir until melted. Stir in pasta, chicken and tomatoes. Season with salt and pepper. Pour mixture into a greased 9 x 13 inch greased casserole dish. Top with remaining cheese, sprinkle oregano over top.
Bake in a preheated 350 degree oven for 20 - 25 minutes or until cheese is melted and starting to brown. Serve hot.
