Chicken Tortilla Casserole
Ingredients:
- onion, diced - 1
- green pepper, diced - 1
- red pepper, diced - 1
- vegatable - 1 T
- minced garlic - 1 t
- cooked chicken breast, diced - 3 cups
- cream of celery soup - 10 3/4 ounce can
- cream of chicken soup - 10 3/4 ounce can
- diced tomatoes and green chiles, undrained - 10 ounce can
- chili powder - 1 T
- corn tortillas, cut into 1 inch strips - 12
- shredded cheddar cheese - 2 cups
Instructions:
In a skillet over medium heat, saute onion, green pepper and red pepper in oil until tender. Add garlic, sauté for 1 minute, stir in chicken, soups, tomatoes and chili powder.
Place half of the tortilla strips in a 9 x 13 inch pan. Top with half of the chicken mixture and 1 cup of cheese; repeat layers. Bake uncovered in a preheated 350 degree oven for 30 minutes or until cheese is completely melted
