Cornbread Sloppy Joe Casserole
Ingredients:
- corn bread muffin mix - 8 1/2 ounce box
- shredded cheddar cheese, divided - 1 cup
- milk - 1/3 cup
- egg - 1
- cream style corn - 14 3/4 ounce can
- sloppy joe sauce, divided - 24 ounce can
- ground beef - 1 pound
- butter - 1 T
- sweet onion, chopped - 1/2
- bell pepper, chopped - 1
- diced green onions - 1/4 cup
Instructions:
In a bowl, combine cornbread mix, 1/2 cup cheddar cheese, milk, egg and corn; stir until well combined. Pour into a greased 13 x 9 inch baking dish.
Bake in a preheated 400 degree oven for 15 minutes or until just set.
While cornbread is baking, melt butter in a skillet over medium heat. Add onion and bell pepper, cook until just beginning to soften. Add ground beef, cook until no longer pink; drain the fat. Set aside 1/2 cup sloppy joe sauce, add remaining to the pan, heat until sauce is warm.
Remove cornbread from oven, with a fork to prick holes over the cornbread. Pour reserved 1/2 cup sloppy joe sauce over cornbread. Spoon meat mixture over the cornbread, top with remaining cheese. Return to the oven for 15 minutes, for cheese to melt. Garnish with green onions.
