Duke’s Casserole
Ingredients:
- ground beef, cooked, drained - 2 pounds
- taco seasoning - 1.25 ounce packet
- sour cream - 4 ounces
- mayonnaise - 4 ounces
- shredded cheddar cheese, divided - 8 ounces
- onion, chopped - 1
- Bisquick Mix - 2 cups
- water - 1 cup
- Roma tomatoes, sliced - 2
- green bell pepper, chopped - 1
- sliced jalapeno peppers OR green chilis - 4 ounce can
Instructions:
Add taco seasoning and water to browned ground beef, per package directions; set aside. In a bowl combine sour cream, mayonnaise, 4 ounces cheese and half of the onion; set aside.
Stir Bisquick and water together to form a soft dough. Place dough in the bottom and 1/2 inch up the sides of a greased 13 x 9 inch pan. Saute bell pepper and remaining onion until slightly tender. Layer ingredients on dough, ground beef, tomatoes, green pepper, onion, jalapeno peppers, sour cream mixture and remaining cheddar cheese.
Bake in a preheated 325 degree oven for 30 - 40 minutes until edges are lightly browned.
