Egg and Bacon Casserole
Ingredients:
- bacon, cooked, crumbled - 12 slices
- butter, melted - 1/4 cup
- croutons - 3 cups
- grated Cheddar cheese - 2 cups
- eggs - 6
- milk - 1 3/4 cups
- bell pepper, diced (any color) - 1
- prepared mustard - 1 T
- salt and pepper - to desired taste
Instructions:
Coat a 13 x 9 inch casserole dish with vegetable spray. Place croutons in the casserole, drizzle melted butter over croutons. Sprinkle cheese over croutons. In a bowl, whisk eggs together. Add milk, peppers, mustard, salt and pepper; beat until well-combined. Pour over the cheese, sprinkle crumbled bacon over top.
Bake in a preheated 325 degree oven for 40 minutes. Remove from oven and let sit for 10 minutes before serving.
