Farmers Casserole
Ingredients:
- frozen hash browns, thawed - 3 cups
- shredded Monterey Jack cheese - 3/4 cup
- diced fully cooked ham - 1 cup
- chopped green onions - 1/4 cup
- eggs - 4
- evaporated milk - 12 ounce can
- black pepper - 1/4 tsp
- salt - 1/8 tsp
Instructions:
Place potatoes in 8 x 8 inch baking pan. Sprinkle cheese, ham and onion over the potatoes.
In a bowl, beat together eggs, evaporated milk, pepper and salt. Pour over the cheese/ham mixture.
Cover, place in the refrigerator overnight. Remove from refrigerator 30 minutes before baking.
Bake uncovered in a preheated 350 degree oven for 55 - 60 minutes till knife inserted in center comes out clean.
