French Onion Soup Casserole
Ingredients:
- sweet onions, sliced - 3 medium
- butter - 3 T
- beef broth - 4 cups
- Worcestershire sauce - 1 t
- French bread, cut 1/2 inch thick, lightly toasted - 6 - 8 slices
- shredded Mozzarella cheese - 1 cup or more - to desired taste
- grated Parmesan cheese - 1/2 cup
Instructions:
In a saucepan, melt butter over low heat, add onions. Cover, cook for about 30 minutes, stir occasionally. Add beef broth and Worcestershire, heat broth mixture until it boils. Reduce heat to low. Simmer, uncovered, for about 30 minutes. (Broth will reduce.) Pour onion and broth mixture into a greased casserole dish. Place toasted bread in a single layer on top of onion mixture. Sprinkle a thick layer mozzarella over toast, top with Parmesan.
Bake, uncovered, in a preheataed 350 degree oven for 20 - 30 minutes, or until cheese melts and top is brown. Serve hot.
