Gouda Mac and Cheese
Ingredients:
- macaroni - 2 rounded cups
- butter - 2 T
- flour - 2 T
- milk - 2 c
- salt and pepper - to desired taste
- grated smoked Gouda cheese - 2 c plus more for topping
Instructions:
Cook macaroni in salted water until al dente, drain.
Melt butter in a pan and add flour, whisk to combine, cook for a minute or two, stir constantly. Whisk in milk, continue to heat until the milk comes to a simmer and is thickened. Remove pan from the stove, stir in the cheese, stirring until all of the cheese is incorporated and sauce is smooth. Add salt and black pepper to taste.
Stir macaroni and sauce together, pour into a baking dish or individual dishes. Bake in a preheated 350 degree oven for 30 minutes. Sprinkle additional cheese on top and place under the broiler until the cheese is browned.
