Mexican Skillet Pasta
Ingredients:
- olive oil - 1 T
- ground turkey - 1 pound
- tomato sauce - 15 ounce can
- salsa - 2 cups
- cooked elbow pasta - 2 cups
- Roma tomato, diced - 1
- corn - 1 cup
- black beans, rinsed - 1 cup
- shredded cheddar cheese - 1/2 cup
- avocado, halved, seeded, peeled, diced - 1
- chopped fresh cilantro leaves - 2 T
Instructions:
In a saucepan, heat oil over medium high heat, add ground turkey and cook until browned, drain excess fat. Stir in tomato sauce and salsa. Add pasta, tomato, corn and beans, gently toss. Add cheese, stir until thoroughly melted. Pour into serving dish, top with avocado and cilantro; serve immediately.
