Pasta and Broccoli
Ingredients:
- pasta, your choice - 12 ounces
- broccoli florets - 4 - 5 cups
- onion, diced - 1/2
- garlic, minced - 1 - 2 cloves
- plain soymilk - 2 1/2 cups
- shredded sharp cheddar cheese - 2 cups
- butter - 2 - 3 T
- flour - 3 T
- dry mustard - 1 t
- salt - 1/2 t
Instructions:
Cook pasta per package directions, leaving it al dente, drain. Steam broccoli for 4-5 minutes.
In a large pot, over medium heat, melt butter, add onion and garlic; saute about 5 minutes.
Reduce heat to med low, add flour. Whisk continuously for 2 minutes, add soymilk and mustard. Increase heat to medium and heat for 5 minutes, until it thickens, add cheese and salt, whisk to melt and turn off heat.
Stir in cooked pasta and broccoli. Salt and pepper to desired taste. Serve immediately.
