Pasta and Hamburger Casserole
Ingredients:
- rotini pasta - 2 cups
- oil - 2 t
- finely chopped onion - 1 - 1 1/2 cups
- garlic, finely chopped - 1 clove
- ground beef - 1 pound
- salt - 3/4 t
- pepper - 1/2 t
- tomato paste - 2 T
- diced tomatoes - 28 ounce can
- Dijon mustard - 2 T
- grated cheddar cheese - 2 cups
- chopped dill pickles - 1/4 cup
Instructions:
Cook pasta per package directions; drain well.
In a skillet, heat oil over medium low heat, add onions, cook for 5 minutes until soft. Stir in garlic, add ground beef, salt and pepper; cook until meat is browned. Stir in tomato paste, tomatoes and mustard. Let mixture boil gently until slightly thickened, about 2 minutes. Combine meat mixture with the pasta and pour into greased 13 x 9 inch casserole pan. Sprinkle cheese over top.
Bake in a preheated 350 degree oven for 15 minutes until cheese is melted. Sprinkle chopped pickles over the top; serve.
