Pasta Shells Stuffed with Spinach and Beef
Ingredients:
- jumbo pasta shells - 6 ounces
- loosely packed spinach - 2 cups
- ground beef - 1/2 pound
- marinara sauce - 1 cup
- shredded mozzarella cheese - 1 cup
- shredded parmesan cheese - 1 cup
- tomato paste - 2 tsp
- diced onions - 1/2 cup
- minced garlic - 2 tsp
- basil - 1 tsp
- garlic powder - 1 tsp
- oregano - 1 tsp
- salt and pepper - to desired taste
Instructions:
Prepare pasta al dente style per package directions, add salt and pepper to taste. (DO NOT overcook pasta.)
While pasta is boiling. Heat a skillet, brown ground beef for 2 - 3 minutes. Add onions, garlic, basil, oregano, tomato paste, salt and pepper. Simmer for 2 minutes, add spinach, simmer for another 2 minutes.
When pasta is done, spoon about 1 1/2 T meat mixture into each shell. Place pasta in a 13 x 9 inch casserole dish. Pour marinara sauce over the top, sprinkle with mozzarella cheese and Parmesan cheese. Bake in a preheated 400 degree oven for 15 minutes.
