3 c potatoes (boiled, cooled, cut into cubes)
1 lb skinless smoked sausage
4 T butter
4 T flour
2 c milk
1/2 t salt
1/4 t pepper
1/2 lb Velveeta cheese, diced
Cut sausage in half, lengthwise, and then cut into 1/2 inch pieces. Place in skillet, fry for 15 minutes, stirring frequently to brown.
Place potatoes and sausage in 2 quart casserole.
In a saucepan over medium heat mix remaining ingredients until melted and smooth.
Pour cheese sauce over potatoes and meat.
Sprinkle 1/2 c sharp cheddar cheese and 1/8 t paprika evenly over the top.
Bake at 350 degrees for 35-45 minutes until golden brown on top.
