Potatoes and Smoked Sausage Casserole
Ingredients:
- idaho potatoes, peeled, boiled, cut into cubes when cool - 3 cups
- butter - 4 T
- flour - 4 T
- milk - 2 cups
- salt - 1/2 tsp
- black pepper - 1/4 tsp
- Velvetta cheese, diced - 1/2 pound
- shredded, sharp Chedder cheese - 1/2 cup
- skinless smoked sausage - 1 pound
- paprika - 1/8 tsp
Instructions:
Slice sausage in half, lengthwise, cut into 1/2 inch half circles. In a skillet, cook for about 15 minutes, turning frequently to slightly brown. Place potatoes and sausage in 2 quart casserole; gently toss.
In a saucepan, over medium heat, using a whisk and stirring constantly until smooth, melt together butter, flour, milk, salt, pepper and Velvetta. Pour cheese sauce over potatoes and meat. Sprinkle cheddar cheese over the top, evenly sprinkle paprika over the cheese.
Bake in a preheated 350 degree oven for 35 - 45 minutes.
