Roasted Asparagus and Garlic Penne
Ingredients:
- garlic - 1 whole head
- olive oil - 1 T plus 1 t
- asparagus, tough ends trimmed and cut into 1 inch pieces - 1 - 1 1/2 pounds
- salt - 1/2 t
- black pepper - 1/2 t
- dried penne pasta - 2 cups
- butter - 2 T
- heavy cream - 1/4 cup
Instructions:
Cut top 1/4 inch off the garlic. Place garlic on a piece of foil, drizzle 1 t olive oil over the top. Wrap garlic in foil, roast in a preheated 400 degree oven for 40 - 45 minutes, until browned and soft. Remove from oven, cool. Remove cloves and mash.
Toss asparagus with salt, pepper and 1 T olive oil. Roast in 400 degree oven for 10 minutes. Cook pasta per package directions, drain. Using the same pan, the pasta was cooked in, melt butter, stir in garlic and cream. Return pasta to pan, add roasted asparagus, toss. Salt and pepper to desired taste. Serve.
