1 T olive oil
1 lb smoked sausage, sliced
1 c diced onion
1 T minced garlic
2 c chicken broth
10 ounce can diced tomatoes
1/2 c milk
8 ounce dry pasta (your choice)
1/2 t salt
1/2 t pepper
Saute onions and sausage in 1 T oil, until lightly browned. Add garlic and cook for 30 seconds.
Add remaining ingredients. Bring mixture to a boil, cover and reduce heat to low. Simmer for 15 minutes, until pasta is tender.
1 c shredded Cheddar-Jack cheese
Turn off the heat and stir in 1/2 c cheese. Sprinkle remaining cheese on top; cover for 5 minutes to for cheese to melt.
Garnish with 1/3 c sliced scallions.
