Spaghetti Squash Bake
Ingredients:
- cooked spaghetti squash - 3 cups
- tomatoes, sliced - 2
- Kosher salt - to desired taste
- garlic powder, onion powder, dried basil, dried parsley - to desired taste
- shredded Mexican cheese blend (divided) - 5 ounces
- fresh basil - for garnish
Instructions:
Grease a 11 x 9 inch casserole dish, spread 1 c squash in pan. Place a layer of tomatoes on the squash, sprinkle with kosher salt and spices, top with 1 1/2 ounces cheese. Add another layer of squash, tomatoes, spices and 1 1/2 ounces cheese. Top with the rest of the squash, 2 ounces cheese and spices.
Bake uncovered in a preheated 350 degree oven for 30 minutes. Garnish with basil.
