Spicy Sausage Pasta
Ingredients:
- olive oil - 1 T
- smoked sausage - 1 pound
- diced onion - 1 1/2 cups
- garlic, minced - 2 cloves
- chicken broth - 2 cups
- Ro-Tel tomatoes and green chiles, mild - 10 ounce can
- heavy cream - 1/2 cup
- penne pasta - 8 ounces
- salt and pepper - 1/2 t each
- shredded Monterey Jack Cheese - 1 cup
- scallions, sliced thin - 1/3 cup
Instructions:
Heat oil in a oven safe skillet on medium high heat until just smoking. Add sausage and onions, cook until lightly browned. Add garlic, cook until fragrant.
Add broth, tomatoes, cream, pasta, salt and pepper; stir. Bring to a boil, cover skillet; reduce heat to medium low. Simmer until pasta is tender, about 15 minutes.
Remove skillet from heat, stir in 1/2 cup cheese. Top with remaining cheese and sprinkle scallions over top. Broil until cheese is melted and lightly browned.
