Stuffed Pepper Casserole
Ingredients:
- lean ground beef (90% or leaner) - 1 pound
- green bell pepper, diced - 1
- red bell pepper, diced - 1
- onion, diced - 1 small
- minced garlic - 1 1/2 T
- brown rice, cooked - 2 cups
- spaghetti sauce - 24 ounce jar
- shredded Italian 4 cheese blend - 1 cup
Instructions:
In a skillet, brown meat, with green and red pepper, onion and garlic. Drain excess fat. Add rice and spaghetti sauce stir until evenly combined. Pour mixture into a greased casserole dish, sprinkle cheese over top.
Bake in a preheated 350 degree oven for 20 - 25 minutes, until heated through and cheese is melted.
