Swiss Cheese Chicken with Noodles
Ingredients:
- panko crumbs - 1 cup
- seasoned bread crumbs - 1/2 cup
- flour - 1/2 cup
- eggs - 2 beaten
- butter, melted - 4 T
- boneless chicken breasts - 3 - 4
- coarse salt and fresh black pepper - to desired taste
- egg noodles - 8 ounces
- heavy cream - 1 cup
- chicken broth - 1 cup
- Dijon mustard - 2 T
- shredded Swiss cheese - 4 ounces
- sliced Swiss cheese - 4 ounces
- cream cheese, cut in cubes - 4 ounces
- butter - 1 T
- fresh chopped parsley - 1 T
Instructions:
In a skillet over medium heat, toast panko crumbs until lightly golden, stir often. Remove, place in shallow dish, mix panko with bread crumbs. Place flour in a second shallow dish and eggs in a third shallow dish.
Preheat oven to 450 degrees. Spread 2 T melted butter over bottom of a roasting pan.
Pound chicken to an even 1 - inch thickness, season with salt and pepper. Dredge each chicken piece in flour then egg, allowing excess to drip off, then press in the panko crumbs. Place in buttered pan. Drizzle 2 T melted butter over chicken.
Reduce oven to 400 degrees, bake until cooked through 12 - 25 minutes depending on their size. Prepare noodles per package directions. Prepare sauce -- In a saucepan add cream, broth and mustard, whisk over medium heat until slightly thickened about 5 minutes. Reduce heat to low, add shredded Swiss cheese and cream cheese, stir until melted. Drain noodles and add to sauce with a tablespoon of butter. Mix well, season with salt and pepper.
When chicken is cooked remove from oven and turn on broiler. Place sliced Swiss cheese on chicken; broil until bubbly. Place noodles on serving plate, lay chicken on noodles, garnished with parsley
